Question About Cooking For A Diabetic (me).?

I’ve had diabetes for 8 years now, but have only recently had to go on insulin because I got cocky and didn’t look after myself.
Now I am beginning to take more care of what I eat.
I have a question though about diabetic caloric intake.
Say I have a bowl of spaghetti and sauce. I know the sauce isn’t bad, but the pasta is pure carbohydrates. I know that. Carbohydrates are processed into sugar quickly and leads to glucose spikes.
What say if I took half the spaghetti and put it aside for another meal, and subsituted white beans for the missing pasta. It might be just as calorie heavy, but would the beans, being a protein, take longer to digest and not lead to as high a glucose spike?

Beans would be better there protein and fiber and absorbed more slowly i believe anyway being diabetic I know beans are better. You can look it up but you could have smaller amounts and more snacks keep tract of your cabs. You have to play with it, your sugar starts to get low you could have some fruit. . It isn’t calories you need to be counting it’s carbohydrates. If the sauce was store bought look at the sugar in it. Alfredo sauce has less carbohydrates than tomato based sauce. Yes the beans would be better for you. Best of Luck.

Honey! love your thinking but it just doesn’t work for me.
I don’t worry about the calories at all. All I count are the grams of carbohydrate!
Forget the beans – all that sort of stuff will spike my glucose to 300 and cost me about 10 units of humalog for the half cup serving! The spaghetti also even a couple of strands of it.
To check what foods do to or for you, try this method of checking them:
prepare a serving of a food
check your glucose level
eat the food
check glucose again 90 minutes after eating the food
journal everything!!
I follow more or less the phase 2 South Beach food plan. Meats and green leafy salads with good dressing!
Think of green beans, tomatoes, peppers as being fruits!!
Think of spinach leafs being veggies!
Have a real very good dressing on it.
do not worry about the amount of fat in the dressing! It is usually a good oil like olive oil. Do NOT mess with the “diet” junk that is so sour it isn’t even funny.
And the reason you had to go on insulin may not have anything to do with your attitude toward diabetes. You may have just arrived here like I did – type 2 diabetes is a progressive condition and progresses as it will no matter if you do everything by the book and watch very closely when you take your meds, do your exercising, and each and every bite you take to eat.
If you were truely on vacation to the land of DeNile, I am very sorry! But now you are awake and still alive. Go walking for an hour as fast as you can every day, even your birthday and Christmas!
